Pigging Out in Tuscany
Here is a peek into what is in store for those lucky ones that will join Kate and I in our summer session of Pigging Out in Tuscany June 17-23, 2007.
Markets, meats, butchers, grilling, woodburning ovens...fabulous food and wine.. in Paradise!

We will be having workshops all year, both in France and Italy and November in Shanghai!

Officially, the Year of the Pig commences on February 18. These things matter a lot to those of us who are fortunate enough to be born in the Year of the Pig, as I am.

Chinese New Year..
Sounds great...will there be chocolate too?
I do a mean Wild boar in dolce forte, which has chocolate... rather like a Tuscan Mole, but easier!
I do like the Bacon Brittle we found last year for the presentation at IACP.
Now if they had only given it a nice chocolate dipping!!!
and maldon salt!
