If you are coming to the Bay area, let me recommend a chef in Palo Alto: Michael Denton at Evvia. He is gifted in charcuterie: I attended an event with both Dotson and Cosentino preparing meats that were raised humanely. Dotson's lamb prosciutto and vitelloni were just spectacular. Perfect texture, perfect balance of flavors, perfect execution of his intention. I was with two chefs who are themselves producing salumi and the like, and they were really impressed. Dotson gets my/our vote for One Fabulous Meat Guy. (I have yet to eat at Evvia.)

FWIW, one of the most respected of San Francisco food bloggers, "San Francisco Gourmet," pronounces Evvia "on my list of favorite Bay Area restaurants," and his favorite restaurant in Palo Alto to this day.
