When I first moved to Italy I was a vegetarian and things llike this offended me too.
In America we are not used to looking in the eye what we east. Living here now for over 20 years, I have learned to respect the country and their food traditions and understand the why behind many of the dishes.
Italy was a war ground and lived without food for years, htey respect their animals and raise them with love, knowing that they provide nutrition and substinence for life.
many people eat hot dogs or bologne and other processes foods.. do you know what you are eating!
This year we presented a panel in AMerica on going whole hog with Fergus Henderson of St John Restaurant in London, and author of Nose to Tail, an English way of cooking. Fergus also has a huge respect for the animal and wastes nothing!
